Processing of new/updated files following sychronisation

I am new to automation using WinSCP (only ever used it manually before) and seek to find out if there is a way to identify new/updated files that have been copied from the remote site, such that I can then process the files into my application.

Current position:
Local reference file set on server A
Remote file set on server B that can change by; files being deleted, new files being added or existing files being updated.

Requirement:
To copy only new/updated files from remote server B to the local server A, and to then be able to identify them / process the files individually into my application.

Any thoughts/help/guidance on this would be appreciated
