WinSCP has recycle bin functionality:

There could be a setting if user enables it, whichever file he is editing winscp will automatically keep the backup of this file for some time(24-48 hr, as per user's choice).

So if the user wants to see the version of file before editing he can easily access it using an option in property->older version.
